Ingredients:
- Olive oil – 1 tbsp
- Chopped onion – ½
- Chopped capsicum – ½
- Salt and pepper to taste
- Tomato paste – 01 tbsp
- Hot water – 380ml
- Instant noodles – 03 packs
- Eggs – 04
- Chili flakes – ½ tsp
- Chopped spring onion
- Grated mozzarella cheese – 100g
- Chopped garlic cloves – 3-4
How to Make Cheesy Noodles:
- In a small bowl, whisk together the eggs, a pinch of salt, pepper, and chopped spring onion. Set aside.
- Heat the olive oil in a pan over medium heat. Add the chopped garlic and cook until it turns a light golden brown and fragrant.
- Stir in the chopped onion and sauté for 3-4 minutes until softened. Add the chopped capsicum, a sprinkle of salt, chili flakes, and pepper. Mix in the tomato paste and cook for another minute, letting the flavors meld.
- Pour in the hot water and add the instant noodles. Cover the pan and cook over low heat for 2-3 minutes, or until the noodles are mostly tender.
- Gently pour the prepared egg mixture over the noodles. Immediately sprinkle the grated mozzarella cheese evenly on top.
- Cover the pan again and cook over low heat for another 2-3 minutes, or until the cheese is melted and bubbly and the eggs are set to your liking.
- Garnish with the remaining fresh chopped spring onion and serve your sensational cheesy noodles immediately!
