  • Chopped capsicum – ½
  • Salt and pepper to taste
  • Tomato paste – 01 tbsp
  • Hot water – 380ml
  • Instant noodles – 03 packs
  • Eggs – 04
  • Chili flakes – ½ tsp
  • Chopped spring onion
  • Grated mozzarella cheese – 100g
  • Chopped garlic cloves – 3-4

How to Make Cheesy Noodles:

  • In a small bowl, whisk together the eggs, a pinch of salt, pepper, and chopped spring onion. Set aside.
  • Heat the olive oil in a pan over medium heat. Add the chopped garlic and cook until it turns a light golden brown and fragrant.
  • Stir in the chopped onion and sauté for 3-4 minutes until softened. Add the chopped capsicum, a sprinkle of salt, chili flakes, and pepper. Mix in the tomato paste and cook for another minute, letting the flavors meld.
  • Pour in the hot water and add the instant noodles. Cover the pan and cook over low heat for 2-3 minutes, or until the noodles are mostly tender.
  • Gently pour the prepared egg mixture over the noodles. Immediately sprinkle the grated mozzarella cheese evenly on top.
  • Cover the pan again and cook over low heat for another 2-3 minutes, or until the cheese is melted and bubbly and the eggs are set to your liking.
  • Garnish with the remaining fresh chopped spring onion and serve your sensational cheesy noodles immediately!
