Chicken and Vege Salad

A healthy chicken and vegetable salad is a nutritious and balanced meal featuring tender, grilled chicken breast combined with a variety of fresh, crisp vegetables. Ingredients:Marinade

  • Salt – ½ tsp
  • Pepper Powder – ¼ tsp
  • Garlic Powder – 01 tsp
  • Chili Powder – 01 tsp
  • Dried Oregano – 01 tsp
  • Ginger Powder – 01 tsp
  • Oil – 03 tbsp
  • Chicken Breasts – 500g

Ingredients:Salad Dressing

  • Low Fat Mayonnaise – 04 tbsp
  • Low Fat Greek Yoghurt – 01 tbsp
  • Salt to taste
  • Black Pepper to taste
  • Lemon Juice – 02 tbsp
  • Dijon Mustard – 01 tsp

Ingredients:Salad

  • Celery Stalks – 02-03
  • Yellow Capsicum – ½
  • Red Onion – ¼
  • Green Apple – ½
  • Spring Onion – 03 leaves
  • Lettuce – 04-05 leaves
  • Chopped Almonds – 50g

How to cook:

  • In a small bowl, mix all the marinade ingredients except the chicken.
  • Add the chicken breasts to the bowl and coat them well in the marinade.
  • Heat 1 tablespoon of oil in a pan and cook the chicken, flipping occasionally, until fully cooked through.
  • Chop all the vegetables, nuts, and cooked chicken into bite-sized pieces and place them in a large bowl.
  • Prepare the salad dressing by mixing the ingredients together, then pour it over the vegetables and chicken.
  • Toss everything until the salad is evenly coated with the dressing.
  • Serve and enjoy!
