How to Make the BEST Tender Chicken Kebabs
- Cut the boneless chicken into fine, even-sized pieces suitable for skewering.
- In a medium bowl, combine the cut chicken with ginger garlic paste, a generous pinch of salt, and the fresh lime juice.
- Toss everything to coat well. Set this aside to marinate for 30 minutes at room temperature. This initial marinade tenderizes the meat.
- In a separate bowl, whisk together the base for the main marinade: curd/yoghurt and olive oil.
- Add all the robust spices and seasonings: turmeric powder, cumin powder, garam masala, chili powder, ground cinnamon, and the soy sauce. Add a little more salt to taste. Mix until you have a smooth, fragrant paste. This is the key to flavorful chicken marinade!
- Add the initially marinated chicken pieces into the spice mixture.
- Mix thoroughly until every piece of chicken is completely and beautifully coated in the marinade.
- Cover the bowl and refrigerate for 2–3 hours. For the absolute most tender chicken kebabs, you can marinate overnight!
- Pre-heat your oven to 250°C (480°F).
- Carefully thread the marinated chicken pieces onto your skewers. Adjust the number of pieces per skewer based on its length.
- Place the chicken skewers on a baking tray. Position the tray on the top shelf of your pre-heated oven.
- Roast for the first 10 minutes.
- Carefully flip the sticks to ensure even cooking.
- Roast for an additional 10 minutes.
- Reduce the oven temperature to 200°C (400°F).
- Remove the tray and generously baste the kebabs with melted butter.
- Return the tray to the oven and roast for 7–8 minutes.
- Flip the sticks one last time.
- Baste the other side with melted butter.
- Roast for the final 6–7 minutes until the edges are lightly charred and the chicken is cooked through and deeply colored.
- Serve your juicy and flavorful chicken kebabs immediately while warm for the best taste experience!
