Ingredients: For For the batter

  • Unsalted Butter – 120g
  • Vanilla – 01 tsp
  • Sugar – 140g
  • Eggs – 01
  • All-purpose Flour – 125g
  • Cocoa Powder – 40g
  • Salt – ½ tsp
  • Baking Soda – ½ tsp

Ingredients: Chocolate Ganache

  • Powdered Sugar – 15g
  • Whipping Cream – 120ml
  • Dark Chocolate – 100g

Ingredients: Mousse

  • Chilled Whipping Cream – 160ml
  • Berries for decoration

How to cook:

  • Preheat oven to 180°C (350°F). Line a muffin tray with cupcake liners.
  • In a large bowl, cream together the softened butter and sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In a separate bowl, whisk together the flour, cocoa powder, salt, and baking soda.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Fill each cupcake liner about halfway with the cookie dough.
  • Bake for 12 mins under 180C in a pre-heated oven.
  • Immediately after removing from the oven, gently press the center of each cookie cup down with the bottom of a small jar or measuring cup to create a well for the mousse.
  • Let the cookie cups cool completely in the muffin tin before filling.
  • To prepare the ganache, in a small bowl combine whipping cream and powdered sugar.
  • Add chocolate into this and melt in a microwave. Let sit for a few minutes, then stir until smooth and melted.
  • In a large bowl, beat the chilled heavy cream with an electric mixer until stiff peaks form.
  • Gently fold the chocolate ganache into the whipped cream until combined.
  • Fill each cooled cookie cup with the chocolate mousse.
  • Decorate with fresh berries.
