Easy Egg Masala Curry Recipe: A Flavorful Weeknight Delight

Perfect for a comforting weeknight meal or a weekend feast, this homemade egg curry is packed with robust Indian spices and tender, hard-boiled eggs. Ingredients:
- Hard boiled eggs – 04 (cut into half)
- Big onions – 02
- Oil – 02 tbsp
- Cloves – 03
- Cinnamon powder – ½ tsp
- Cardamom – 03
- Ginger garlic paste – 1 ½ tsp
- Medium chopped tomato – 01
- Salt to taste
- Chili powder – 01 tsp
- Coriander powder – 01 tsp
- Cumin powder – ½ tsp
- Curd/yoghurt – 04 tbsp
- Garam masala – ½ tsp
- Water – 150ml
How to cook:
- Finely chop the large onions and fry them in a pan until they turn golden brown. Remove from heat and set aside.
- Once cooled slightly, blend the fried onions into a smooth paste.
- In a pan, heat the oil over medium heat. Add the cardamom pods, cloves, and cinnamon powder. Sauté for a few seconds until fragrant.
- Stir in the ginger garlic paste and cook for about 30 seconds until its raw smell disappears.
- Add the diced tomato and sauté for approximately 2 minutes, or until it softens.
- Introduce the chili powder, coriander powder, and cumin powder. Fry for 2 minutes, stirring continuously to prevent burning.
- Turn off the flame and carefully add the curd/yoghurt to the pan. Stir vigorously for 1 minute to ensure it's well combined and doesn't curdle.
- Turn the flame back on to medium-low. Cook for another 2-3 minutes, stirring occasionally, until the mixture thickens slightly, and the oil begins to separate.
- Stir in the fried onion paste and cook for 2 minutes, allowing the flavors to meld.
- Add the garam masala and mix well.
- Pour in the water and bring the curry to a gentle simmer. Reduce heat to low and simmer for 2 minutes.
- Carefully place the hard-boiled egg halves into the simmering curry, yolk-side down. Cook on low heat for 2 minutes.
- Gently flip the eggs over and cook for another 2 minutes, allowing them to absorb the delicious flavors.
