Ingredients:

  • Hard boiled eggs – 04 (cut into half)
  • Big onions – 02
  • Oil – 02 tbsp
  • Cloves – 03
  • Cinnamon powder – ½ tsp
  • Cardamom – 03
  • Ginger garlic paste – 1 ½ tsp
  • Medium chopped tomato – 01
  • Salt to taste
  • Chili powder – 01 tsp
  • Coriander powder – 01 tsp
  • Cumin powder – ½ tsp
  • Curd/yoghurt – 04 tbsp
  • Garam masala – ½ tsp
  • Water – 150ml

How to cook:

  • Finely chop the large onions and fry them in a pan until they turn golden brown. Remove from heat and set aside.
  • Once cooled slightly, blend the fried onions into a smooth paste.
  • In a pan, heat the oil over medium heat. Add the cardamom pods, cloves, and cinnamon powder. Sauté for a few seconds until fragrant.
  • Stir in the ginger garlic paste and cook for about 30 seconds until its raw smell disappears.
  • Add the diced tomato and sauté for approximately 2 minutes, or until it softens.
  • Introduce the chili powder, coriander powder, and cumin powder. Fry for 2 minutes, stirring continuously to prevent burning.
  • Turn off the flame and carefully add the curd/yoghurt to the pan. Stir vigorously for 1 minute to ensure it's well combined and doesn't curdle.
  • Turn the flame back on to medium-low. Cook for another 2-3 minutes, stirring occasionally, until the mixture thickens slightly, and the oil begins to separate.
  • Stir in the fried onion paste and cook for 2 minutes, allowing the flavors to meld.
  • Add the garam masala and mix well.
  • Pour in the water and bring the curry to a gentle simmer. Reduce heat to low and simmer for 2 minutes.
  • Carefully place the hard-boiled egg halves into the simmering curry, yolk-side down. Cook on low heat for 2 minutes.
  • Gently flip the eggs over and cook for another 2 minutes, allowing them to absorb the delicious flavors.
  • Serve hot and enjoy your homemade Egg Masala Curry!
