Ingredients:

  • Chicken breasts: 2 large
  • Salt & pepper
  • Butter: 2 ½ tbsp
  • All-purpose flour: 50g
  • Garlic cloves: 5, finely chopped
  • Maple syrup: 80g
  • Soy sauce: 1 tbsp
  • White vinegar: ½ tbsp
  • Spring onion: Freshly chopped, for garnish

Cooking Instructions:

  • Lay the chicken breasts flat. Using a sharp knife, make shallow diagonal cuts across the top of the chicken in both directions to create a diamond/square pattern. Be careful not to cut all the way through!
  • Season both sides generously with salt and pepper. Dredge the chicken in the all-purpose flour, shaking off any excess so you have a very thin, even coating.
  • In a large skillet over medium-high heat, melt 2 tbsp of butter. Add the chicken and fry for 3-4 minutes per side until the exterior is beautifully golden brown and crispy.
  • Lower the heat slightly. Add the remaining ½ tbsp of butter to the pan along with the chopped garlic. Sauté for about 30 seconds until fragrant.
  • Pour in the maple syrup, soy sauce, and white vinegar. Let the liquid bubble and simmer. As it reduces, it will turn into a thick, glossy glaze. Spoon the sauce over the chicken as it thickens to ensure every inch is coated.
  • Once the sauce has reached your desired consistency, remove from heat. Sprinkle with fresh chopped spring onions for a pop of color and crunch.
