Healthy Oatmeal Banana Muffins

Ingredients:

  • Overripe banana puree – 250g
  • All-purpose flour – 180g
  • Quick oats – 150g
  • Granulated sugar – 135g
  • Baking soda – ½ tsp
  • Baking powder – 1 ½ tsp
  • Salt – ½ tsp
  • Ground cinnamon – 1 tsp
  • Full cream milk – 120ml
  • Vegetable oil / Melted butter / Olive oil – 60ml
  • Vanilla – 1 tsp
  • Large eggs – 2
  • Chocolate chips – 90g

Instructions:

  • Preheat your oven to 190°C (375°F). In a large bowl, whisk together the all-purpose flour, quick oats, granulated sugar, ground cinnamon, baking powder, baking soda, and salt. Set this mixture aside.
  • In a separate, larger bowl, beat the eggs, milk, vanilla, and oil until well combined. Mash the banana puree into this mixture until smooth.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until the flour is incorporated. Be careful not to overmix. Gently fold in the chocolate chips.
  • Line a 12-cup muffin tin with muffin liners. Fill each cup about halfway with the batter. For an extra touch, sprinkle additional oats and chocolate chips on top of each muffin. Bake in your preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely. These delicious banana oat muffins are best enjoyed warm or at room temperature.
