Ingredients:
- Prawns (Cleaned & washed) - 500g
- Chilli pieces - 2 tsp
- Ginger garlic paste - 1 tbsp
- Salt & pepper to taste
- Sliced big onion - 1
- Green chilies
- Curry leaves
- Chopped spring onion
- Coconut oil - 2 tbsp
- Cinnamon - 1 inch piece
Instructions: How to Make the Perfect Prawn Stir-Fry
- Heat the coconut oil in a wide pan or wok over medium heat.
- Once shimmering, add the ginger garlic paste and sauté for about 30 seconds until fragrant (be careful not to burn it).
- Add the sliced onion and chopped green chilies.
- Sauté gently, stirring often, until the onions are perfectly translucent and tender, releasing their sweetness.
- Add the curry leaves and the cinnamon stick to the pan and let them sizzle for a moment to release their fragrance.
- Add the cleaned prawns. Gently mix everything together to ensure the prawns are well coated in the aromatic paste and oil.
- Stir in the salt, chili pieces, and pepper powder.
- Continue to stir-fry for 10 to 15 minutes, or until the prawns have beautifully curled and turned a perfect, opaque pink. Tip: Be careful not to overcook the prawns, or they will become tough.
- Turn off the flame and scatter the chopped spring onion over the stir-fry.
- Serve immediately with your favorite sides for a fast and unforgettable meal!
