One-Pan Sausage and Pepper Scramble with a Sunny-Side Up Egg

It’s perfect for those busy mornings when you want something satisfying without the fuss. With savory sausage, sweet capsicum, and a hint of spice, all topped with a perfectly cooked egg, this dish is a true crowd-pleaser.
Ingredients:
- Sausages – 2
- Butter – 2 tbsp
- Brown onion – ½
- Yello capsicum – 1
- Salt & pepper to taste
- Eggs – 1
- Spring onion
- Chili pieces – ½ tsp
Instructions:
- In a pan, melt 1 tbsp of butter over medium heat. Add the chopped sausages and cook for about 3 minutes, or until they are a light golden brown.
- Stir in the chopped brown onion, salt, chili pieces, and pepper. Sauté for another 3 minutes until the onion begins to soften.
- Add the chopped yellow capsicum and cook for about 3 minutes, allowing it to become tender-crisp. Turn off the heat and stir in the chopped spring onion.
- In a separate small pan, melt the remaining 1 tbsp of butter. Carefully crack the egg into the pan. Season with a pinch of salt and pepper. Cook the egg to your liking (we recommend a runny yolk!).
- Slide the cooked egg onto the sausage and vegetable mixture. Serve immediately and enjoy your simple, hearty breakfast!
