One-Pan Sausage and Pepper Scramble with a Sunny-Side Up Egg

With savory sausage, sweet capsicum, and a hint of spice, all topped with a perfectly cooked egg, this dish is a true crowd-pleaser.

Ingredients:

  • Sausages – 2
  • Butter – 2 tbsp
  • Brown onion – ½
  • Yello capsicum – 1
  • Salt & pepper to taste
  • Eggs – 1
  • Spring onion
  • Chili pieces – ½ tsp

Instructions:

  • In a pan, melt 1 tbsp of butter over medium heat. Add the chopped sausages and cook for about 3 minutes, or until they are a light golden brown.
  • Stir in the chopped brown onion, salt, chili pieces, and pepper. Sauté for another 3 minutes until the onion begins to soften.
  • Add the chopped yellow capsicum and cook for about 3 minutes, allowing it to become tender-crisp. Turn off the heat and stir in the chopped spring onion.
  • In a separate small pan, melt the remaining 1 tbsp of butter. Carefully crack the egg into the pan. Season with a pinch of salt and pepper. Cook the egg to your liking (we recommend a runny yolk!).
  • Slide the cooked egg onto the sausage and vegetable mixture. Serve immediately and enjoy your simple, hearty breakfast!
