- Dhal – 200g
- Green chili – 01
- Chili powder – ½ tsp
- Curry powder – ½ tsp
- Turmeric powder – ¼ tsp

- Water – 01 cup

How to cook:
- Rinse the dhal thoroughly under cold water. Transfer the washed dhal to a medium cooking pot.
- To the pot, add the chopped big onion, minced garlic, curry leaves, pandan leaves, and green chili. Stir in the chili powder, curry powder, turmeric powder, and salt to taste. Pour in the water.
- Cook the dhal mixture over medium heat, stirring occasionally, until the dhal is well-cooked and most of the excess water has evaporated. The dhal should be soft and creamy. Once cooked, transfer the dhal to a separate bowl and set aside.
- Heat the cooking oil in a pan or wok over medium heat. Add the thinly sliced garlic cloves and fry until they turn a beautiful golden brown and become fragrant.
- Toss in the dried red chili and continue to fry for about 1 minute, allowing its smoky flavor to infuse the oil.
- Add the finely chopped big onion to the pan and sauté for approximately 2 minutes until it softens and becomes translucent.
- Stir in the fresh curry leaves for an extra burst of aroma.
- Finally, add the cooked dhal back into the pan with the stir-fry. Give everything a good mix, ensuring the dhal is thoroughly coated with the aromatic tempering. Cook for just 1 more minute, allowing the flavors to meld.
