Ingredients: For the dough

  • Whole chicken – 1kg
  • Olive Oil – 03 tbsp
  • Paprika – 01 tsp
  • Ground Cumin – 01 tsp
  • Pepper Powder – 01 tsp
  • Salt – 02 tbsp
  • Chopped Coriander Leaves – 02 tsp
  • Ginger Garlic Paste – 01 tbsp
  • Oregano – 01 tsp
  • Lemon Juice – 01 tbsp
  • Curry Powder – 01 tsp
  • Soy Sauce – 01 tsp
  • Tomato Sauce – 01 tsp
  • Turmeric Powder – ½ tsp
  • Cinnamon Powder – ½ tsp
  • Cardamom Powder – ½ tsp

How to cook:

  • Pat the whole chicken dry with paper towels. This crucial step ensures crispy skin. Using a butter knife, carefully loosen the skin from the breast meat, creating pockets for the flavorful seasoning.
  • In a bowl, combine paprika, curry powder, salt, pepper, turmeric powder, cinnamon powder, oregano, cardamom powder, cumin powder, ginger garlic paste, lemon juice, chopped coriander leaves, olive oil, soy sauce, and tomato sauce. Mix well to create a vibrant marinade.
  • Generously brush the seasoning all over the chicken, including under the loosened skin. Give the chicken a gentle massage to ensure the flavors penetrate deeply. Let it marinate for at least 30 minutes. The longer it marinates, the more intense the flavor will be!
