Easy Spicy Stir-Fried Egg Noodles

Ingredients:
- Boiled noodles: 250g
- Eggs: 4 large eggs
- Boiled eggs - 1
- Butter: 2 tbsp
- Oil: 2 tbsp
- Chopped garlic: 5 cloves
- Ginger paste: 1 tsp
- Chopped onion: ½
- Chopped carrot: 1 whole carrot
- Leeks: 50g
- Chili pieces: 1 tsp
- Chili paste: 1 tbsp
- Soy sauce: 1 tbsp
- Sesame oil: ½ tsp
- Salt and pepper: To taste
How to Make It:
- In a bowl, beat the eggs lightly with a pinch of salt and pepper. Melt the butter in a pan over medium heat, add the eggs, and soft-scramble them. Remove from the pan and set aside.
- In the same pan, heat the oil over medium-high heat. Toss in the chopped garlic and ginger paste, sautéing until fragrant and golden.
- Add the chopped onion and carrot to the pan. Season with a little salt, the chili pieces, and the chili paste, stirring well to release all those fiery, savory aromas.
- Toss in the fresh leeks and fluffy scrambled eggs, letting them mingle with the spiced vegetable mix.
