Easy Savory Minced Chicken & Egg Scramble

There are some mornings—or busy weeknights—when you just need a meal that is quick, deeply comforting, and packed with flavor. This Savory Minced Chicken and Egg Scramble is one of my ultimate go-to dishes for exactly those moments.

By combining lean ground chicken with fluffy, protein-rich eggs and a warm blend of aromatic spices like ginger, garlic, and a hint of cinnamon, this dish turns simple ingredients into something truly special. Brightened up with fresh mint and parsley, it’s a wholesome, satisfying meal you can whip up in under 20 minutes!

Ingredients:

  • 450g Minced chicken (ground chicken)
  • 5 Large eggs
  • 2 Garlic cloves, minced
  • ½ Medium onion, finely chopped
  • 1 tbsp Olive oil
  • ½ tsp Ginger powder
  • ½ tsp Cinnamon powder
  • Chopped fresh mint and parsley
  • Chopped spring onions (for garnish)
  • Salt and black pepper, to taste

Step-by-Step Instructions:

  • In a bowl, mix the minced chicken with the ginger powder, cinnamon powder, chopped onion, minced garlic, fresh mint, fresh parsley, salt, and black pepper. Stir well so the spices and herbs are evenly distributed throughout the meat.
  • Heat the olive oil in a pan over medium heat. Add the seasoned chicken mixture and cook for 6–7 minutes. Stir frequently, using your spoon or spatula to break the chicken into small, bite-sized crumbles as it cooks.
  • While the chicken cooks, whisk the 5 eggs lightly in a small bowl with a pinch of salt and pepper.
  • Reduce the heat to low. Pour the beaten egg mixture directly over the cooked chicken in the pan. Stir gently and continuously to combine, cooking until the eggs are soft, fluffy, and fully set to your liking.
  • Remove the pan from the heat and fold in the fresh chopped spring onions.
  • This versatile, high-protein dish pair perfectly with a warm bowl of steamed rice or served hot over a toasted slice of crisp sourdough bread!
