Ultimate Fusion Mixed Spaghetti
If you are hunting for an easy, protein-packed weeknight dinner that cleverly clears out the crisper drawer, this Mixed Spaghetti recipe is for you. It brings together tender boiled spaghetti, succulent prawns, flaky tuna, and a rainbow of fresh vegetables, all tossed in a savory, umami-rich Asian-inspired sauce.
Ingredients:
- Spaghetti: 250g (boiled)
- Prawns: 7–8 (peeled and deveined)
- Canned Tuna: 1 can (drained)
- Eggs: 2
- Canned Beans: 1 can (rinsed and drained)
- Big Onion: 1/2, chopped
- Garlic: 5 cloves, minced
- Ginger Paste: 1 tsp
- Zucchini: 1, sliced or diced
- Carrot: 1, julienned or sliced
- Capsicum (Bell Pepper): 1/2, sliced
- Leeks: A handful, sliced
- Kale: A handful, roughly chopped
- Oil: 2 tbsp
- Soy Sauce: 1 tbsp
- Oyster Sauce: 1/2 tsp
- Hoisin Sauce: 1/2 tsp
- Chili Paste: 2 tsp
- Chili Flakes: 1 tsp
- Salt: To taste
Step-by-Step Instructions:
- Heat the oil in a large wok or skillet over medium-high heat. Fry the ginger paste and minced garlic until fragrant, then add the chopped onions and cook until translucent.
- Toss in the prawns and sauté for 2–3 minutes until they just turn pink and opaque.
- Stir in the carrots, zucchini, and capsicum. Season with salt, chili flakes, and chili paste, tossing well to coat the vegetables in the spices.
- Add the leeks, canned beans, and drained tuna. Stir gently to combine everything without breaking up the tuna too much.
- Pour in the soy sauce, hoisin sauce, and oyster sauce, letting the savory aromas bloom in the pan.
- Push the mixture slightly to one side of the pan to create an open space. Crack the eggs directly into the empty space and scramble them until cooked through, then mix them into the rest of the pan.
- Add the chopped kale, followed by the boiled spaghetti. Toss everything together continuously over the heat until the noodles are evenly coated, heated through, and the kale is wilted.
- Plate up immediately while hot and enjoy!
