I started making these because I wanted a breakfast sandwich that hit all the right notes—fluffy spiced eggs, savory bacon, and that perfectly melted, gooey cheese—without having to stand over the stove flipping individual sandwiches. By baking these all together in the oven, the butter melts beautifully into the English muffins, creating an absolute masterpiece.

Ingredients You’ll Need:
- 6 English muffins
- 6 Eggs
- ¼ cup Milk
- 6 Cheese slices
- Bacon
- 1 tbsp Olive oil
- Butter
- ¼ tsp Cayenne pepper
- Salt and pepper
Step-by-Step Instructions:
- In a medium bowl, vigorously mix the eggs, milk, salt, pepper, and cayenne pepper until smooth and slightly frothy. Heat 1 tbsp of olive oil in a skillet over medium heat. Pour in the egg mixture and cook thoroughly, creating a delicious, fluffy egg layer. Once cooked, set aside.
- In a separate pan, heat a splash of olive oil and cook your bacon until it reaches your desired level of crispiness. Drain on paper towels and set aside.
- Preheat your oven to 200°C. Cut your English muffins horizontally in half and generously spread butter on both sides of each muffin.
- On a baking tray, place the bottom halves of the muffins butter-side down. Now, layer your toppings. Add a portion of the seasoned cooked egg. Top with the crispy bacon. Layer on a cheese slice for that perfect melt. Finish with the top muffin half, butter-side up.
- Cover the entire baking tray tightly with aluminum foil. Bake in the preheated oven at 200°C for 20 minutes. The foil traps the steam, ensuring the cheese gets incredibly melty while the butter infuses deep into the muffins.
