- 50g vermicelli noodles
- 25 prawns (Note: You can easily swap prawns for eggs, fish, or meat)
- 2 tsp oil (for cooking)
- 8 rice paper wrappers
- Fresh mint & parsley
- Lettuce leaves
- Sliced vegetables of your choice
Ingredients:For the Savory Peanut-Lime Sauce
- ½ lime, juiced
- 1 tbsp soy sauce
- 1 minced garlic clove
- 1 tsp peanut butter
Step-by-Step Instructions:
- Place your vermicelli noodles into a large bowl and cover them with boiling water. Let them soften for 1 to 2 minutes, then drain thoroughly into a sieve or colander.
- Carefully slice or tear your choice of fresh vegetables into thin, crisp strips.
- Heat 2 teaspoons of oil in a pan over medium-high heat. Add the prawns and cook until tender and opaque.
- Half-fill a medium bowl with warm water. Submerge one rice paper wrapper for about 10 seconds until it becomes pliable, then lay it flat on a clean work bench.
- Place a portion of your lettuce, sliced veggies, vermicelli noodles, cooked prawns, and fresh mint and parsley onto the center of the wrapper.
- Gently fold the rice paper over the fillings once to enclose them. Fold in both sides securely and continue to roll the rice paper upward into a tight, neat log. Repeat for the remaining 7 rolls.
- In a small bowl, whisk together the lime juice, soy sauce, peanut butter, and minced garlic until smooth and well combined.
