Ingredients:
- 2 Salmon fillets
- 500g Sweet potato
- 500g Broccoli
- 1 bunch Asparagus
- 1 Corn on the cob
- 2 tbsp Olive oil
- 1 tsp Garlic powder
- 1 tsp Dried herbs (such as oregano, thyme, or rosemary)
- 1 tbsp Parmesan cheese
- Salt and pepper to taste
Step-by-Step Instructions:
- Preheat your oven to 200°C. Cut the sweet potato, broccoli, asparagus, and corn into bite-sized pieces and toss them into a large mixing bowl.
- Drizzle the veggies with olive oil, then add the garlic powder, dried herbs, parmesan cheese, and a pinch of salt. Toss everything together until the vegetables are evenly coated.
- Pat the salmon fillets dry with a paper towel. Season both sides with a little olive oil, salt, and pepper.
- Transfer the seasoned vegetables and salmon fillets onto a large baking tray. Make sure to spread the veggies out in a single layer so they roast beautifully instead of steaming.
- Place the tray in the oven and bake at 200°C for 30 minutes, or until the salmon is flaky and the sweet potatoes are tender.
