Ingredients:

  • Microwave Black Rice: 250g
  • Microwave Brown, Red, and Wild Rice: 250g
  • Oil: 2 tbsp
  • Chopped Garlic: 3-4 cloves
  • Sliced Big Onion: ½
  • Turmeric Powder: ¼ tsp
  • Curry Powder: ½ tsp
  • Chili Pieces: ½ tsp
  • Cinnamon Powder: ¼ tsp
  • Salt and Pepper: To taste
  • Chopped Carrots: 1
  • Green Beans: 150g
  • Chopped Capsicum: ½
  • Chopped Cabbage: A generous handful
  • Chopped Kale Leaves: 2 leaves
  • Frozen Green Peas: To taste
  • Frozen Sweet Corn: To taste
  • Tuna: 1 small can (drained)
  • Eggs: 2
  • Cashews: 150g
  • Soy Sauce: 1 tsp
  • Sesame Oil: ½ tsp

Step-by-Step Instructions:

  • Heat the oil in a large pan or wok over medium heat. Add the chopped garlic and fry until beautifully golden-brown and fragrant. Toss in the sliced onions and sauté for 2–3 minutes until they begin to soften and turn translucent.
  • Add the fresh carrots, green beans, and capsicum to the pan. Sprinkle in your salt, pepper, turmeric powder, curry powder, chili pieces, and cinnamon powder. Stir-fry well, ensuring the vibrant spices completely coat and infuse the vegetables.
  • Stir in the frozen green peas, frozen sweet corn, chopped kale, cabbage, and the canned tuna. Mix gently to combine all the elements, allowing the greens to slightly wilt and the tuna to absorb the warm spices.
